550g + 50g flour 400g water 5-10g yeast (1 pack) 1 tablespoon sugar 1/2 tablespoon salt

  1. Keep 50g of flour apart and mix everything else in a bowl
  2. Knead the dough on a counter with your spare flour until elastic, about 5-10m
  3. Let it rise in a warm place for 1-2h
  4. Remove, deflate, split in 2 equal pieces
  5. Fold each piece in on itself, then roll it
  6. Let them rise for 45 more minutes
  7. Warm up the oven to 225C
  8. If using trays, baking spray them, or oil them
  9. Place the loaves on the trays. Slash each of them diagonally with a knife 3-4 times
  10. You may want to sprinkle some flour or sesame on top before putting in
  11. Cover with aluminium foil
  12. Bake for 15m, then remove the aluminium and bake for 10-12 more
  13. Turn off the oven, open the door, let it be for 5 more minutes
  14. Remove from oven, and let it cool down on a rail or other place where the bottom can cool evenly
